Race into Success!

Passion is one of the greatest things in life that has so many meanings and conveys something different to each and every one of us. One should never underestimate the power of passion by limiting it to only romantic love or relationships. You can be passionate towards a job or hobby, a sport, traveling the world, or even communicating, etc. Choose wisely!

Whatever yours is, You MUST follow it, dedicate your heart and soul into it, and commit as much time as you can. Now we’re talking! 

One of my greatest passions is to RUN.

I am proudly 50 years old, and I am a married mother of two wonderful children. I started running very late in life. When I originally lived in Florida, I would jog across the front of the ocean over about 2 miles every week. Later when we moved to Texas, I began running with my husband and I realized I was leaving him behind being able to actually run more than the usual! One day, my cousin’s husband had a competition to run 10 miles and we came along to Support. That’s when I began to visualize actually getting to be a part of my very own race. 

Going into this experience, I had no idea what my time or pace was going to be. But I started doing 3 mile runs and searching for races to attend to. That’s when after two years, we moved up to Colorado in the Mountains; where some of the mountains have altitudes of over 8,500 feet! I felt inside of me that it was the perfect place to get my practice on. 

I must confess my first year in Garden of the Gods Nature trails, was very tough to complete. Running for long periods of times can be exhausting, which is why you must always envision your end goal. My most memorable year was 2015, when I ran my first Marathon! Although my time 5:06 was not over the top, I really enjoyed it and couldn’t have been prouder of myself! It was a very satisfying feeling of strength and I have only been improving ever since. I eventually worked myself up to finishing my first 10 mile run in under one hour. And this year, I ran one in 50:07 finishing in 3rd place in my category! I am not the fastest runner but I am always seeing improvement and growth each time from my last one. 

          My advice to you is to stride as quietly as possible. The lighter and more balanced you stay, the easier it is on your body to move forward with pace. I also use an infrared heat wrap therapy regularly and it is crucial! It works magic on my sore body and helps build me back up stronger by increasing circulation. A proper diet is of course vital in helping your body repair itself always.

          Currently, I am training for an upcoming Marathon up in the Revel Rockies. It will be a downhill road race with beautiful scenery from the forests to the canyons of the Rocky Mountains and to the Foothills of Denver, Colorado. My official date is on June 11th. My trainings today consists of different strategies three times a week because of my demanding schedule, but I am giving it my all. I do one long slow day, one interval track day, and one tread climber day. I like to rest my body for a full day after each run. I also love using the App: ‘Nike-Run Club’. It’s also inspiring and more fun to call my running ‘Training’, rather than ‘Exercise’ because it reminds me of the goal I am pursuing. 

My biggest challenge is that I can sometimes hurt myself when I push my running too hard. But I am managing Creatively and Inspired for being outside in nature and being Active. I absorb all the fresh energy of the beautiful world around me. I now know that I want to keep running and competing! It is such a rush and thrill. Running has improved my life in so many ways and I am always reminded of why did I not start this earlier!

 I hope that by sharing my experience with you, it will remind you that you can always turn your Passion into Fun and experiment to see what it truly is you will love. Do not get discouraged by pain, because pain is only fear leaving your body! I would love to hear about your experience with running, whether is competing or just a hobby.

Goat's Cheese and Tomato Canapes!

Whenever we have something to celebrate I throw a drinks party with a losts of savoury bites to eat. Whether it is a Mother's Day, Birthday, Chrirstmas, New Year's, or just a simple celebration of a family achievement or event, there is nothing nicer than getting lots of friends and family around for a couple of hours to raise a glass or two.

If having a drinks party sounds like a lot of works, I have found some quick and easy Canapes that can be made ahead of time and have no last-minute preparation.

Prepare ahead These can be prepared 2 3 hours in advance, up to the point where they are ready to go into the oven, then baked at the last minute.

Ingredients: 24 Canapes 

12 Dough Balls 

A little softened butter 

150 g pack soft goat cheese 

1 tablespoon red pesto 

1/4 teaspoon chopped thyme leaves 

12 cherry tomatoes, halved

25g Parmesan cheese, finely grated. 

Salt and freshly ground black pepper. 

Instructions:

1.-Preheat the oven to 375 - 400 F. Line a baking sheet with baking paper.

2.-Slice the dough balls in half and then cut a thin slice off the rounded side so both halves sit flat, butter one side and arrange, buttered side down, on the baking sheet.

3.- Mix the goat chees, pesto and thyme together in a small bowl. Spread this on to the unbuttered sides of the dough making sure that it is spread up to the edges, then place one tomoto half on top.

4.- Season with a sprinkle of Parmesan cheese. Bake for ten minutes until crisp and lightly golden. Serve warm

Asian Seared Tuna

This is simplicity itself 

 

Ingredients: 4 servings.

1 pound tuna  

1 teaspoon Olive oil

2 teaspoon fish oil 

1 teaspoon fresh ginger 

2 green onion 

1 Lemon 

1 teaspoon soy soyce 

1 cup shredded green & red Cabbage 

Black Pepper, to taste 

Coriander to your preference

Mustar sugar to your preference 

 

Instructions:

In a large resealable plastic bag, combine 1 green onions, lemon, soy souce, fish oil, coriander and ginger. Add tuna. Seal and turn to coat; marinate for 10 minutes.

Meanwhile, for dressing, combine the olive oil,  mustard sugar, and remaining onion, salt and pepper in a small bowl; slowly whisk in remaining oil. Set aside.

On individual salad plates, arrange the shredded green and red cabbage Cut tuna to your preference or into bite-size pieces; add to salads. Drizzle salads with dressing. Sprinkle with chives.

Pork Chops with Balsamic Vinegar

Today I will be sharing one of my favorite Pork chops recipes! It is super easy to make and pleasant for a Spring dinner with lots of flavor.

Many of you may not know, but since I am running 10-12 miles once or twice a week and doing many exercises, I must take care of my diet and be aware of all the food I intake even more. In just 7 weeks, I will be running a Marathon!

I must confess, that in my house we only prepare pork very few times a year, and when I make something new, I love to experiment and add my own style to any dish. I have learned that when we prepare pork, I make sure to wash it with lemon and remove all the fat. (It’s VERY IMPORTANT)

This recipe and ingredients should feed up to 4 people.

        Ingredients:

  • 2 tablespoons Oil Olive
  • 4 pork chops
  • couple pinches of salt
  • 1 yellow onion, thinly sliced
  • 8 garlic cloves, thinly sliced
  • 28 ounces of diced tomatoes
  • 1 cup tomato sauce
  • ¼ cup chicken broth
  • ¼ cup balsamic vinegar
  • 1 tablespoon of herbs de provence
  • 2 tablespoons minced parsley
  • 1 tablespoon torn basil
  • black pepper, to taste

 Instructions: 

 In a large sauté pan over medium-high heat, add 2 tablespoons of Olive. Liberally salt the pork chops. Once pan is hot, add to the pan, not crowding it to ensure a good sear on the chops. I cooked two at a time. Sear all chops on both sides for about 3 minutes, until golden then set aside.

 To the hot pan, add onion and garlic cloves and a bit of salt then use a wooden spatula to scrape the pork chops bits off the bottom of the pan. Let the onions cook for about 8 - 10 minutes, until soft and slightly caramelized.

Then add the rest of the ingredients except for the basil and pepper, mix to combine and let cook for another 5 minutes, until tomatoes have broken down a bit.

Add pork chops back to the pan with the sauce and completely cover in the sauce. Cover with lid and let cook for about 30-35 more minutes, until pork chops are completely cooked through. Note: Make sure the Pork chops are cooked.

Lastly, add torn basil and pepper and mix to combine.

Serve immediately with sauce mixture on top of pork chops!

RESOLUTIONS START WITH YOU!

I have never particularly been a person to set “New Year Resolutions” when the new year starts. Although these usually work for some people, most of what is said out to do can be unrealistic to get done. For example, all the people who set out to begin the Gym on the first week of January. As I hit the gym on the first weeks of 2017, I noticed all the newcomers crowding the treadmills and workout classes. And as the weeks went by, most of these people disappeared drastically!

            It is amazing how much motivation a person can have just because of the idea of a fresh start. As the conversation of resolutions came up with some friends, they were shocked to find out I did not start New Years resolutions. But instead, I explained to them that I prefer to set short-term and long-term weekly goals and write them all out on a calendar. Each year, as I notice it is coming to an end around November, I love to go to Walmart and buy a brand new old fashioned Calendar to hang on my wall. I understand that not many people still use calendars, since they are so accessible on our computers and phones, but having the real thing makes my life so much easier! I like to write out and schedule all my goals and targets for the day, week and month and keep check-lists. By the end of each week, I feel a great sense of satisfaction seeing everything checked-off and accomplished.

            It is best to write in your calendar each beginning when you feel inspired and motivated to plan your entire month. I get excited writing down that I will get to do a half marathon or 10k run. Looking back, I feel very proud to know I was able to go through with it all and achieve these goals!

For 2017, I invite you to instead of setting New Year Resolutions, why not try something more connected to who you are? We are only 27 days into the year, There is still time!!!

Forget the things that hold you back and begin to get an altitude on your life and career.

Start by asking important questions and writing down the answers in a notebook or personal journal. Then, Look back and notice all the progress you’ve made. No matter what you decide to do ultimately, the secret to keeping up with your goals is to set them realistically, Stay focused, and Stay Committed!

5 LITTLE TIPS TO STAY FIT THIS HOLIDAY SEASON

 TAKE THE STAIRS: During the holidays, try taking stairs whenever available. This little workout can go a long way!

 WALK IT OUT:  Instead of standing or sitting in one place throughout parties, walk around the room! You"ll get to interact with more people, and you"ll be keeping your body in motion. 

DO SOME PUSHUPS: When you wake up, before you hop in the shower, try doing just 10 pushups. It's a great way to get your body moving in the morning, and as your resistance increases you can increase the number of pushups you do. 

PLAY WITH THE KIDS: Holiday mean long events with the littlest members of the family. Volunteer to take the kids outside fora a game of tag. You'll get brownie points with grandma, and you'll end up chasing them around all night!

PARK AROUND THE BLOCK: Park further out to get in some quick cardio before and after the party.

~ Delicious Chili in 30 mins or less! ~

This recipe was passed down to me by a dear friend from Texas. As many of you know I live up in the Rocky Mountains of Colorado, and from now until May, the temperature in these upcoming three months will not exceed 25-30 degrees Fahrenheit!

My husband is from Scotland and since it’s always been cold there, he’s shown me the right tricks and special ingredients to prepare dishes and soups for the Winter. For this very cold weather and heavy snow, I have prepared a perfect recipe for a weeknight meal to share with you!

So now let's talk about the Chili: When my guests taste it, they always wonder how many hours I’ve spent in the kitchen making it from scratch. When I reveal the secret, they are in shock to find out how simple it is to make.

Truth is, this is the best and easiest recipe EVER!

I recommend using a Large Crock Pot or Soup Pot. It also feeds up to 6 People!

Ingredients: 

1 1/2 pounds ground meat or chuck roast {80% lean} {beef, buffalo, turkey or other} or vegetarian protein {tofu, Boca crumbles, or other} - slice roasts into cubes.

1 large onion, diced

2-3 cloves garlic, minced

1 teaspoon Oregano

1 teaspoon Thyme

1 Can Dark Red Kidney Beans - I use BUSH's brand 26oz

1 Can Chili Beams - May be mild sauce or regular 16oz

1 Can Pinto Beans 16oz

1 Bag of Cheddar Cheese

2 branches of Green Onions

Chips for tortilla to your preference.

Sour Cream - to your preference

A sprig of Cilantro

Avocado

Texas Two-Steps Chili Mix from Cookwell Company. They have Spice and All natural types. In my pantry, I always have both because we do not all like the spice food.

Directions:

If you are going to use a Crock Pot, remember it must be close to boiling before you begin putting in the ingredients.

Adjust the meat to medium heat. Add the garlic, stir for 1 minute and add the onion. Continue to stir until softened, another 3 minutes medium heat. The reason I put the meat first, is to release the fat to then add garlic onion so I do not need to put oil.

If you're making a vegetarian chili with tofu or other protein, add it along with the beans. Reduce the amount of stock and the cooking time by half.

If it is Paleo then you want to substitute the meat with pork or sausage and not beans.

To the preference of each person, I prefer to drain the Red Kidney Beans and Pinto Beans. Once drained start to pour inside the crock pot and stir chili beans continuing for about 2-4 minutes.

Then, add the bottle of Two Steps Mix Chili and continue stirring for 1 minute while adding Thyme and Oregano.

Bring the chili to a simmer and cook for 40 minutes, stirring occasionally until the meat is very tender. {Cubes of chuck roast may take a bit longer}.

Taste and add salt to your preference.

Serve with your style of Cheese, avocado, cilantro, sour cream, spring onions and corn bread to your preference.

Chile is often the best after the day it is cooked.

Fun last minute Decoration tips to brighten the Season!

This year, I have decided to go with bright colors like gold combined with white and blue, and I am loving the result!!!

For example, these bright and fashionable ornaments, just add a few to your tree, along with some golden flowers that are also very stylish will add the perfect finish to your tree this year.

 

 

As for the fire place, keep it very simple yet sophisticated for guests. Just add some bright white flowers with red wine roses to highlight, or try a blue bow styled with long floral spikes of blue. 

These will stand and shine from any angle!

 

For the foyer, I purchased beautiful flowers in gold and white, so perfect you do not need to put anything else! 

 

Elegant and very sophisticated just in time for the Holiday cheers!

EXTRA GOODIES: Keep extra toothbrushes, toothpaste, and extra travel necessities like a phone charger, painkillers, body lotion, hand lotion, hairbrushes or combs. For the women in our lives, a blow-dryer is a necessity! {and don’t forget the WIFI password}

 

 

 

 PILLOW SERVICE:

While it is tempting to store all our old and flat pillows in guest rooms, consider buying a few new pillows to keep your guest bed as comfortable as possible too. 

 

 

 

 

LAUNDRY DAY: Offer your laundry washroom to guests before they head home so they can have clean clothes to unpack back at home!  

 

 

EXTRA BLANKETS:

In addition to your regular comforters, leave a lighter blanket at the foot of beds. Another blanket gives guest the freedom to be as warm or cool as they want. Especially when you live up in the mountains or colder locations like myself.

 

 

  

  

 

 

HOT-TUB OR JACUZZI: 

If you don’t have one, do not worry. In my case, offering mine to my guests is one of their most memorable experiences they cherish. When my family visits and I take them hiking, they feel a great sense of excitement and gratitude.

A JOLLY TREAT: PALEO GRANOLA BAR!

A perfect snack for the Holidays. How many times do we rush out of the house and spend countless hours running errands and before we know it, our tummy is growling! If you have kids, you know how unfortunate this feeling can be. Also, if you’re like me, you get hungry every 3 hours.

So why not avoid this and have some easy to make granola bars for the road! 

From experience, it greatly helps you avoid falling into the temptation of unhealthy junk fast food in every corner on the road. With the Paleo Granola Bars in your purse, you’ll be set and satisfied to finish your daily tasks with no roadblocks.

The best thing about this snack is how easy it is to make and how rewarding it will feel, especially with all organic natural ingredients. Believe me, it is worth it!!!

It won’t be processed with extra unnecessary ingredients or chemicals and can be ready in as little as 15 minutes. It can be kept fresh preserved in the fridge for up to two weeks. Also, the recipe can always be adjusted to your favorite preferred ingredients! 

Ingredients:

3 cups of assorted nuts and seeds { Slivered almonds, Whole almonds, walnuts, sunflower seeds} 

  • 1 cup dried cranberries 
  • 2 cups unsweetened shredded coconut
  • 1/4 cup coconut oil 
  • 1/2 cup Sunflower seed butter 
  • 1/2 reaspoon sea salt 
  • 1/2 cup raw honey 
  • 1/4 teaspoon pure vanilla extract 
  • 1 teaspoon cinnamon 

Directions: 

Pull out a 9X13 Pyrex dish and throw down a layer of parchement. Set aside.

Pour assorted nuts and seeds into a large mixing bowl and combine.

Take 1 cup of assorted nuts out of bowl and add to a cutting board. Use a sharp knife to chop nuts into smaller pieces.

Take remaining 2 cups of assorted nuts and add to a food processor. Pulse until they're chopped much smaller, a variety in sizes of nut pieces will be good for look and feel of the bars.

Add the nuts from the food processor and the cutting board back into the mixing bowl and stir to combine.

Add the dried cranberries to the mixture and stir to combine.

Add the shredded coconut to the bowl and again, stir to combine.

In a small saucepan  add coconut oil, sunflower seed butter, honey, vanilla, salt and cinnamon, maybe add a few more shakes of cinnamon while doing that too. Cook, stirring over medium-low heat until it starts to bubble. Once bubbling, remove from heat.

Pour the liquid mixture over the nut mixture in the mixing bowl and stir to combine. Make sure everything is mixed well.

Pour the nuts and honey mixture into the previously set up dish on the parchment paper and either use a second sheet of parchment paper, slightly wet hands or a spoon to press firmly to pack the ingredients together. Make sure, then double check, that everything is nicely packed together.

Let the mixture sit on the counter and settle for 1-2 hours.

Cover and put in the freezer for 1 hour, or longer.

Using parchment paper makes it super easy to now take the large sheet of granola out of the dish and transfer it onto a cutting board. Use a sharp knife to slice {not saw, otherwise they have a tendency to start to flake apart} the bars into whatever size pieces you'd like your granola bars to be.
